Bottle Storage & Maturation
Our wine takes 2-5 years to mature in the bottle until it becomes good enough to drink. After that, it can take another 5-10 years until it reaches its peak. We produce around 600 bottles per year. Thus we need storage capacity for around 5000 bottles. Bottles are ideally stored in a dark room at a constant temperature of around 55 oF and 50-70% relative humidity. When we built the winery we did not adequately plan for this storage space in the cellar, so we needed to retrofit and air-condition a room in the barn a few years later.
